2023 Sotto Voce Sparkling Grenache Rose
The base wine for this beautiful sparkling Rose was Grenache picked at 19brix to retain acidity and brightness. The fruit was harvested by hand in half-ton boxes and delivered to the winery very cold. The fruit was then dumped immediately into the press and allowed to soak for 2 hours. After pressing the juice, it was inoculated with W15 yeast and kept at 50 degrees for its entire fermentation. Upon completion of primary fermentation the juice was transferred to a pressurized tank and a second fermentation was started. This is called the Charmat Method. After completion of the Charmat method the wine was filtered and bottled.
